RICE WITH VEGETABLES AND TOFU
*INGREDIENTS*
BASMATI RICE mixed with RED RICE: 150 g
OLIVE OIL
GARLIC: 1 clove
MINCED GINGER: 1 teaspoon
CORIANDER POWDERS: ½ teaspoon
CUMIN POWDERS: ½ teaspoon
YELLOW PEPPER: ½
RED PEPPER: ½
COURGETTE: 1
SMOKED TOFU: 100 g
SALT
PEPPER

*INSTRUCTION*
1st step:
Cook rice in salty boiling water.
2nd step:
After having browned a garlic clove in a pan with oil, ginger, cumin and coriander add vegatebles, already cut into cubes.
Cook them for five minutes with a naked flame.
Remove garlic, season with salt and pepper, add the cubed tofu and continue cooking for other two minutes.
3rd step:
Mix vegetables and rice and put them aside to cool.
